Salmon tartare with fresh and smoked salmon

Serves 4 as a small starter · about 20 minutes
Ingredients
- 250 gSashimi-quality sushi salmon ↗(suitable for eating raw)
- 100 gSmoked salmon slices ↗
- 1 small shallot
- 1 tsp finely chopped capers
- 1 tbsp lemon juice
- 1 tbsp mild olive oil
- 1 tbsp chopped dill
- freshly ground pepper
- approx. 40 gKeta salmon roe ↗as a topping
- Lettuce leaves and bread to serve
Method
- Cut the well-chilled raw salmon into small cubes. Gently mix with the lemon juice, olive oil, finely chopped shallot, dill and pepper. Cover and marinate in the refrigerator for about 10 minutes.
- Finely dice the smoked salmon too. Just before serving, fold it into the marinated raw salmon together with the capers. Do not add salt: the smoked salmon already provides seasoning.
- Arrange the tartare on chilled plates, top with keta salmon roe and finish with freshly ground pepper. Serve immediately with salad and bread.
Use only salmon explicitly suitable for eating raw. Keep it refrigerated throughout and serve freshly prepared. Raw fish is not suitable for pregnant women, young children or people with a weakened immune system.
